Sago Pakoda – Recipe
Traditionally, Sago (aka Sabudana) is usually used in making
kheer or vathal (odiyalu/fryums). Sago pakoda is a different snack made with sago
as the main ingredient. It is a crispy snack apt for sweater weather! It is
also a great snack for kids in the evening!
Let us dive into how to cook this yummy food:
Ingredients:
- Sago – 1 cup
- Rava (sooji) – 2 cups
- Butter milk – 5 cups
- Jeera – 1.5 tbsp
- Onion – 1 big
- Green chillies – 8 nos
- Ginger – a small piece
- Curry leaves – a handful
- Coriander – a handful
- Salt – to taste
- In a mixing bowl, add butter milk (a little sourness is preferred), sago, rava and salt and mix well to form a thick batter
- Let it soak for at least 4 hours
- From time to time whisk the batter well and if required, sprinkle water. This is because as sago and rava gets soaked, it absorbs butter milk making the batter thick
- Once sago and rava are fully soaked, add jeera, chopped onions, green chillies, curry leaves and coriander to the batter
- (I could get only coarse roasted rava here, therefore I blended it once before adding the rest of the ingredients, if you have fine rava, you can skip blending.)
- Heat oil in a pan
- Once the oil is quite hot, make rough balls of the batter and deep fry it until golden brown.
- Serve hot with coconut/coriander chutney
