Green chicken skewers – Recipe
Green chicken skewers is a delicious starter with an Indian
touch to its flavor. The pleasant aroma, unique taste and the ease of cooking
makes it an appealing party finger-food. Not to mention the attractive color,
this dish is savored well by both adults and children alike.
Let us dive into how to cook this yummy food:
Ingredients:
- Chicken thigh/breast boneless – 1 pound (cut into bite sizes)
- Green capsicum – 1 medium (deseeded)
- Mint leaves – 1 handful
- Coriander leaves – 1 handful
- Green chillies – 6-8 nos
- Curd- 5 tbsp
- Ginger garlic paste – 1tbsp
- Milk powder (optional) – 1 tbsp
- Pepper powder (finely ground) – 1 tsp
- Salt – to taste
- Chat masala – ½ tsp
- Skewers – 4-5 nos
Recipe:
- Wash and clean the chicken pieces thoroughly
- Grind the capsicum, mint and coriander leaves, green chillies into a fine paste. Do not add water as the water content in these are good enough to make a fine paste
- In a mixing bowl, add curd, ground paste, ginger garlic paste, milk powder, pepper powder and salt and whisk it thoroughly
- Add the chicken pieces to it and let it marinate in the refrigerator for an hour
- If you are using wooden skewers, soak them in water for 30 mins-1 hour
- Once chicken is marinated, pin the chicken pieces to the skewers, no more than 4-5 pieces per stick
- Heat a shallow frying pan with cooking oil (I prefer olive oil, but sunflower/canola oil can also be used)
- Once the oil is quite hot, place the skewers spaced out
- Cook on each side until the crust is nicely caramelized and the chicken is well done
- While serving, sprinkle chaat masala for added taste (this step is optional)
